Edith Pruitt has been putting up preserves in small copper pots since 2014. Every jar on Warren Street is made in-house, in season, with fruit from the orchards and farm stands lining Route 9. No pectin shortcuts — just sugar, fruit and time.

Our Story

Edith Pruitt, one pot at a time

Edith grew up canning with her grandmother in the Catskills. After twenty years in the restaurant business — the last eight as pastry chef in Manhattan — she moved to Hudson and opened a shop on Warren Street in 2014. The name is a small joke: it’s just one copper pot.

Every September she drives the valley picking up windfalls and gleaned fruit from farms she’s been visiting for a decade. The shop runs October through June. Kitchen tours — 45 minutes, small groups, by appointment — run on Saturdays.
